Smashed burger Sweet potato bun burger

Why I’ve swapped a regular burger bun for sweet potato-
Sweet potatoes bring fiber, potassium, and vitamin A. A white bun is mostly refined carbs with fewer nutrients.
Sweet potatoes generally have a lower glycemic load than a white bun, so you’re less likely to get that post-meal crash.
My new go to burgher bun!

This recipe serves 2

Ingredients
🍠
300g sweet potato- total weight once sliced into “bun”
Half tsp smoked paprika
Salt and pepper
6 sprays of 1kcal spray (calories above don’t account for oil cals- track your oils separately)

250g 5% fat mince
Half tsp onion granules
Half tsp garlic granules
Half tsp smoked paprika
🧀 🥒
30g pickled gerkins (15g each)
40g grated full fat cheese (20g each)
Method
Pre- heat oven to 200 degrees. And line a baking tray in tin foil.
Slice your large potato to create 4 “bun” slices.
Place slices on baking tray- spray with 1kcal spray (or your choice of oil) season with salt, pepper and smoked paprika.
Pop in oven for 30 mins.
Meanwhile, make your beef burgers
In a bowl combine beef mince, onion and garlic granules, salt, pepper and smoked paprika. Mix well. And divide into two burgers.
I pan fried my burgers for around 15 mins- I kept checking regularly. I browned each side and then covered the frying pan with a lid.
Once cooked through I added the cheese and recovered with the lid to melt!
Now build your burgers and enjoy! I added mustard and ketchup and it was delish!
