Cheesy Sausage Pasta

A delicious, family-friendly meal that’s packed with flavour and easy to make.

Serves 2 - you can easily double up to serve more mouths.

Ingredients
4 chicken protein chipolata sausages, sliced into chunks
170g dried macaroni pasta (approximately 350g cooked)
40g red onion, finely diced
6g garlic purée
8 vine-ripened cherry tomatoes, halved
1 tsp dried basil
5 fresh basil leaves, chopped
100g Protein Philadelphia
30g Grana Padano or Parmesan cheese, finely grated
½ low-salt chicken stock cube, dissolved in 100ml boiling water
100g drained sweetcorn
Salt and pepper, to taste
Method
Cook the macaroni according to the packet instructions.
While the pasta is cooking, sauté the diced onion in a large pan over a low heat until softened.
Add the cherry tomatoes and sausage pieces. Cook until the sausages are browned on the outside.
Stir in the garlic purée and Protein Philadelphia until combined.
Add the sweetcorn, chicken stock, dried basil, fresh basil and padano cheese. Season with salt and pepper to taste.
Simmer gently for 5 minutes, or until the sausages are cooked through and the sauce has thickened slightly.
Drain the pasta and weigh out 350g cooked pasta if tracking portions.
Add the pasta to the sauce and stir until everything is well coated.
Serve and enjoy!
