Cheesy buffalo smoked bacon and chicken



this is amazing! And can be paired with so many things;


Baked potato, Home make chips, Mash

Rice, on a brioche bun 🤤 or in a massive salad!


So easy to make too!

Ingredients (serves 2)


  • 300g chicken breast- cut into chunks

  • 1tsp paprika

  • 5g garlic purĂ©e


  • 2 x smoked bacon rashers


  • 50g small red onion- diced

  • 40ml or 40g (same thing) Franks Buffalo hot sauce

  • 60g lightest cream cheese

  • 30g 50% less fat grated cheese


  • Half a chicken stock cube dissolved in a spash off water- not much at all- this just help loosen the sauce up a little. (Milk would work too)


Method


Pop bacon medallions in the air frier for approx 6 mins. Removed and cut up.


Sautée your onions on a low heat. I used 1kcal spray (track your oil separately) to stop the onions burning and sticking to the pan I added a splash of water.


Once onions have softened add in your chicken, paprika and garlic purée and stir well. Brown your chicken for a few mins.


Next add all other ingredients including bacon bits - stir well. Cover with a lid, reduce heat and let your chicken cook through for a few mins! And done!
