Slow cooker honey garlic chilli chicken

A Tasty and quick slow cooker dinner! Great for mid week or even as a fakeaway!

Ingredients

  • 340g chicken breast

  • 50g clear honey

  • 50ml light soya sauce

  • 12g garlic purée

  • 1 tsp crushed chilli flakes

  • 15g tomato purée

  • 40g red onion - diced

  • 100g yellow pepper- diced

  • 40g frozen peas (added nearer the end)

  • 5g corn flour (you need this at the very end)



Method


In your slow cooker add whole chicken breast and add in diced red onions and yellow peppers.


In a large bowl combine honey, soya sauce, chilli flakes, tomato purée and garlic purée in a bowl and mix.


Pour mixture over chicken. On a low setting cook for 4 hours. Or on a high heat 2 hours.


Towards the end of your timer- 30 mins before the end- shred chicken. I done with two forms while it was still in the slow cooker.

Add frozen peas and cornflours slurry (cornflour with a tsp of cold water to form a paste)


Mix well and allow to cook for remaining 30 mins!


I served with veetee sticky rice and it was delish!
