Protein packed Cajun chicken salad bowl

Salad does not need to be boring! And it can be sooooo filling!



In this recipe I combine my favourite side dishes to add a beautiful balance of carbs, protein and fats to keep me fuller for longer! And it’s packed with flavour!




Combined cals for my plate= 507 cals

Ingredients for reminding elements of salad bowl. Serves 2 (so this can be dinner and leftovers for lunch or two lunches prepped)


  • 300g raw chicken breast. Mine was one large breast so o butterflied and cut in half so I had two thinner slices of chicken.

  • 6g cajun chicken seasoning



  • 1 serving for my bulgar wheat side

  • and 1 serving of my chipotle chick pea side per salad.


  • 60g spinach - full of goodness - divided evenly between two

  • 20g rocket leaves- I love the peppery taste- divided evenly between 2


  • 90g cherry tomatoes - halfed and decided been 2

  • 60g pickled beetroot slices- halfed and decided been 2

  • 80g cucumber- sliced up and divided between 2

  • 100g black pitted olives- diced between 2

  • 16g Orkney cheese - 8g each salad to top it



Method


Prep chicken and season with cajun spice and bake for 20 mins in the oven at 200 degrees.


Meanwhile prep salad bits and sides.


Combine all ingredients and enjoy!
