Parmesan crusted chicken breast

Serves 3 (or two as I give Ross 2 portions)

Ingredients
370g raw chicken breast
20g panko breadcrumbs
15g padano Parmesan cheese
Half tsp smoked paprika
Salt and pepper
20g light mayo
Quarter tsp garlic granules
Method
I cooked my chicken in the oven- Preheat oven to 200 degrees.
Prep chicken- slice chicken so it’s thin flat slices. I butterflied chicken breasts then cut in half.
Mix:
in 1 x bowl mix panko breadcrumbs, smoked paprika, padano Parmesan, garlic granules and salt and pepper.
On top side only- spread mayo over chicken then top with breadcrumb mix -
Place chicken on grill rack tray. Oven bake for 25-30 mins.
i served with Parmesan baked green beans and rice with a drizzle of Nando’s sweet chilli jam!
It would be delish with mash, root mash, sweet potato mash or rice- differing flavours!
