One Pot Chicken Tikka and rice

A QUICK mid week dinner or fab for lunch prep too!

Ingredients


  • 220g raw chicken breast - cut into cubes

  • 100ml coconut milk- I used cartoned coconut milk - NOT tinned

  • 200g garlic Passatta

  • 15g tikka curry seasoning

  • Half tsp cumin

  • 10glazy garlic

  • 5g ginger puree

  • 1 x red pepper - diced

  • 1 x yellow pepper- diced

  • 50g red onion - finely diced

  • 1 x bag of pilau rice

  • Optional- I like spice so I did add some chilli flakes!


Method


Sautée red onions and peppers for 5 mins on a low heat (I used 1kcal spray- please track your oil cals separately) I also add a splash of water part way through to stop the veg for burning or sticking


Next add chicken and brown- I increased the temperature to do this. Once chicken is browned add seasonings, lazy garlic and ginger puree and mix well.


Add all other ingredients (optional - at this point add chilli flakes) , mix well and simmer on a low heat for 10 mins!
