One pan piri piri chipotle chicken and potatoes


Mixing it up instead of rice we’ll use potato! So yummy and filling! And a great mid week dinner idea! Or food prep for lunch idea too!

Ingredients


*I used 1kcal spray and tracked what I used separately)


  • 250g Maris piper Potatoes (Diced)


  • 280g Chicken Breasg

  • 60g Red Onion (Diced)

  • 130g Red Pepper (Diced)

  • 10f garlic purée

  • 15g Piri Piri Seasoning

  • 5g chipotle paste

  • 250g garlic Passata

  • 60g Mozzarella (Grated)

  • Half of a reduced salt chicken stock cube- dissolved in 100ml of water


Method


After dicing my potatoes I allowed them to soak in water for 5 mins before draining.


In a large pan using your choice of oil (I use 1kcal spray to keep cals down) Stir fry the potatoes on a medium high heat for 10 mins.


To the same pan, fry chicken for 3-4 minutes or until evenly golden.


Then add diced onion and peppers and stir fry for a couple of minutes.


Then add garlic purée followed by piri piri seasoning and chipotle paste and stir.


Add Passata and chicken stock and stir-  bring to a simmer for 5 minutes.

Top with grated cheese and cover with lid until it’s melted!
