Mini quiche Lorraine

The perfect high protein snack/ lunch you can prep ahead and can store in the fridge

Recipe makes 6
116 calories each quiche
P.16g C: 3g F: 6g
3 x smoked bacon medallions
150g cottage cheese
3 medium eggs
35g red onion, finely chopped
Season with pepper - no salt
90g 50% less fat mature cheese - grated
Method
Preheat oven to 180 degrees.
Cooked bacon medallions- I done mine in the air fryer and then cut into small bits.
While bacon is cooking- Blend cottage cheese and eggs until smooth. And finely dice red onion.
Once bacon is cooked add to eggs mix along with red onion and mix well.
Finally add grate cheese and stir.
Spray muffin/ cupcake tray with spray oil OR use muffin cases and spoon the mixture evenly into each space.
Place in the oven and bake for about 20-25 mins until cooked through.
