Veggie cheesy cottage cheese with sourdough

A fab meat free sandwich filler!

High in protein. Full of veggies and relish.


This recipe makes 2 servings. 2 days lunches sorted or double up for 4 days!

Ingredients


  • 150g fat free cottage cheese

  • 100g diced vine ripened cherry tomatoes

  • 30g diced yellow pepper

  • 20g diced red onion

  • 40g grated cheese- I used Orkney cheese

  • Dried chilli flakes (optional) but a very good addition

  • Salt and pepper

  • 80g x 2 seeded sourdough (I used Hovis)


Method


Grab a large bowl or Tupperware tub.


Dice tomatoes, onions and yellow peppers. Add to bowl.

Next add cottage cheese and grated cheese.

Season with salt, pepper and chilli flakes and mix well.


Toast sourdough and top! Yum!
