Meatballs, mash and healthy gravy!

I loved this! Such a wholesome dinner!
I made my gravy first!
Then I prepped my meatballs - popped in the oven and made my mash while meatballs were cooking!

Healthy gravy
This was actually pretty straight forward to make and has no animal juices! So you can make it a vegetarian gravy too! I used a chicken stock cube but all you need to do is switched for a vegetable stock cube.
This can also be frozen for 3 months!

Ingredients - serves 6
150g white onion- dived
160g peeled carrot- chopped up
40g less sugar and salt ketchup
4 tsp balsamic vinegar
3 x less alt chicken stock cubes dissolved in 1 litre of boiling water
14g plain flour
Method
I used 1 kcal pray and some water while sautéing the vegIn a large pan sautee vegetables and cook them over a medium-high heat for 10-15 mins to brown.
Stir in the ketchup and stir until everything becomes sticky, then splash in the vinegar.
Stir in the stock and season with a pinch of salt, if you like. Bring to the boil, then simmer gently for 20 mins. Using a hand blender, blitz to create a thin soup-like consistency, then pass through a sieve into another saucepan and bring to the simmer.
Add flour and whisk to remove all lumps and continue to cook until thickened.
Serve straightaway, chill, or freeze for reheating at a later date.
Chicken meatballs
This makes 14 big meatballs

Ingredients
500g lean chicken mince- I got mine from Aldi
2 tsp smoked paprika
2 tsp dried basil
10g garlic purée
40g rolled porridge oats
20g grand padano cheese (powdered Parmesan)
Salt and pepper
Method
Combine all ingredients in a large bowl and mix well. I used my hands.
I then formed 14 really sized meatballs
Pre heat oven to 200 degrees.
In a large pan using 1kcal spray (track the oil you use separately) I browned all of the meatballs for a few mins Turing then frequently.
I then transferred the meatballs on to a baking tray lined with grease proof paper and popped in the oven for 10-12 mins until cooked through.
Sweet potato mash - serves 4

So so so easy to make and you know exactly what’s in your mash!
Ingredients
650g of peeled sweet potatoes
15g lighter butter (I used norpak)
Salt and pepper to taste
Method
Cut potatoes into equal chunks.
Boil until soft. I prick with a fork. Mine took around 10 mins.
Drain. And pop back in pot. Add butter.salt and pepper and mash!
