Marry me chicken sausages

Recipe serves 2- divided equally

Ingredients


  • 4 x chicken sausages (I used Aldi chicken sausages- 133 calories for 2 sausages)

  • 1 x oxo less salt stock cube (dissolved in 50ml boiling water)

  • 1tsp smoked paprika

  • 1tsp dried basil

  • 10g lazy garlic from a jar

  • 50g sundried tomatoes (drained and finely chopped)

  • 50g lightest philidelphia

  • 30g grated padano (the powdered (Parmesan)

  • 100ml skimmed milk (red milk)

  • 6 fresh basil leaves - chopped up

  • Salt and pepper


Method


In a large frying pan (using 1kcal spray) brown and cook your sausages for around 10 mins.


Remove sausages. Using the same pan- add sundried tomatoes and garlic to your pan and heat through. Moving around the pan frequently for a couple of minutes.


Next add smoked paprika and dried basil. Stir. Add milk, stock and allow to heat up. Finally add creamy cheese, Parmesan,  season with salt and pepper and add chopped up fresh basil.


I added the sausages back into the pan and cover with a lid, cooking on a very low heat for around 5 mins!


I served mine with sweet potato mash! It would work well with rice too!
