Greek chicken one pot

One of my new favs! Ridiculously tasty and ridiculously easy to make!

Ingredients
300g of raw chicken breast- butterflied and sliced in half so you create a thin fillet of chicken
10g chicken gryos seasoning ( Schwartz the Real Greek)
50g raw red onion
10g garlic purée
10 black pitted olives - from jar
30g sundried tomatoes- from jar- drained of oil- I used my fingers to squeeze off oil
125g chargrilled pepper- from jar- drained of oil- I used my fingers to squeeze off oil
1 tbsp balsamic vinegar
20g feta cheese - for garnish
Method
Prep chicken. Butterflied and sliced in half so you create a thin fillet of chicken.
Season with chicken gryos seasoning
Prep onion. Finely diced.
In a frying pan on a low heat- using 1kcal spray (track the oil you use separately) sautee onions. I add a bit of water to stop them sticking and burning.
After a few mins of sautéing onions- add seasoning chicken. Turn heat up and seal the chicken on each side for a couple of mins. Add splash of balsamic vinegar at this point.
Next add all other ingredients (except feta as that’s for garnish) mix well. Cover pan with a lid and on a low heat allow chicken to cook through!
