Halloumi Hot Honey Noodles


Mega quick and perfect for a midweek dinner

Ingredients

  • 1 block light halloumi, soaked in boiling water for 20 minutes (160g once soaked)

  • 40g red onion, cut into chunky pieces

  • 120g yellow pepper, sliced into thin strips

  • 50g carrot, sliced into thin strips

  • 20g Manuka honey or clear honey

  • 30g sweet chilli sauce

  • 20ml light soy sauce

  • 1 tsp lazy garlic

  • Dried chilli flakes, to taste

  • 2 servings of straight-to-wok noodles (466 calories per pack)I used Asda brand

  • 1 kcal cooking spray (or preferred low-calorie spray oil)- oil calories not accounted for in recipe- track separately


Method


  1. Soak the halloumi in boiling water for 20 minutes, then drain.


  2. While the halloumi is soaking, prepare the vegetables. Slice the pepper and carrot into long thin strips and cut the red onion into chunky pieces.


  3. Mix together the honey, sweet chilli sauce, soy sauce and chilli flakes in a small bowl. Set aside.


  4. Dice the halloumi and dry-fry in a non-stick pan for a few minutes until golden brown, stirring regularly to prevent sticking. Remove from the pan and set aside.


  5. Using the same pan, spray lightly with cooking spray and stir-fry the onion, pepper, carrot and garlic for around 5 minutes until softened but still slightly crisp.


  6. Add the noodles and stir-fry for a further 2 minutes.


  7. Pour in the sauce and toss everything together until the noodles are coated.


  8. Return the halloumi to the pan, stir through, and heat for 1 minute.

  9. Serve immediately.
