Ingredients
Greek Chicken:
250g chicken breasts cut into smaller fillets
50g 0% fat Greek yogurt
1 tsp smoked paprika
1 tsp cumin powder
5g garlic purée
Quater tsp onion powder
half tsp dried basil
Salt and pepper

Roasted Sweet Potatoes:
350g raw sweet potatoes, cut into cubes
1 tsp cinnamon
15 sprays 1kcal spray
Salt & pepper
Salad:
130g cucumber, diced
10 x vine ripened cherry tomatoes, halved
20g red onion, thinly sliced
Salt and Pepper
30g feta cheese
15g black olives (I use Jarred olives)
To Serve: calories not included - add according to your needs and track!

Method

Mix Greek yogurt, smoked paprika, oregano, cumin, garlic purée, onion powder, basil, black pepper, and salt into a marinade
Coat chicken breasts and marinate for at least 30 minutes

Toss diced sweet potatoes with 1kcsl spray cinnamon, salt, and pepper
Roast at 200 degree for 30-40 minutes until tender and caramelised

Cook marinated chicken in oven for 20-25 mins until golden and cooked through.

Combine cucumbers, cherry tomatoes, olives, and red onion and feta in a bowl
Serve:
Assemble bowls with sweet potatoes, sliced chicken, and the cucumber tomato salad
Top with zatziki
Serve with warm toasted pita on the side
