BBQ Halloumi Burger

This combo was absolutely delicious and will definitely be making a repeat appearance! The longest part is soaking the halloumi, but once that’s done, the recipe comes together in minutes.

Ingredients
1 block reduced-fat halloumi (225g before soaking; approximately 180g after soaking)
2 brioche buns
35g Kansas City BBQ sauce
20g red onion, sliced into rings
Method
Place the halloumi in a bowl and cover with boiling water. Soak for 20 minutes. This helps make the halloumi much more tender and less rubbery.
Remove from the water, pat dry, and cut the block in half to create two burger-sized pieces.
Dry-fry the halloumi in a non-stick pan (no oil needed), turning occasionally until golden brown on all sides.
Place the BBQ sauce in a bowl and toss the cooked halloumi pieces until evenly coated.
Toast the brioche buns.
Assemble the burgers by placing the BBQ-coated halloumi onto the buns, topping with the red onion rings, and drizzling over any remaining BBQ sauce.
