The flavour combo is epic. Cinnamon roasted sweet potatoes, halloumi, and feta!

Ingredients
🍠Roasted Sweet Potatoes
350g raw sweet potato, cubed
1 tsp cinnamon
15 sprays 1 kcal cooking spray
Salt & pepper
🥗 Salad Bowl (split between 2 bowls)
block of reduced-fat halloumi (soaked for 20 mins in bowling water- 160g weight after soaking)
80g bag of watercress, spinach & rocket salad
50g cucumber, diced
120g vine-ripened cherry tomatoes
40g red onion, thinly sliced
40g black olives
30g feta cheese
14g balsamic glaze
50g tzatziki
Method
Preheat oven and prepare the sweet potato cubes.
Place on a lined baking tray, season with cinnamon, salt and pepper, then spray with cooking spray.
Roast for around 30 minutes until soft and golden.
Soak halloumi for 20 minutes, then pat dry.
Prepare the salad ingredients and divide between two bowls.
Dry fry the halloumi until golden (no oil needed).
Add sweet potato, halloumi, tzatziki, balsamic glaze and crumbled feta.
