Bang bang beef and sticky rice


Wait for it…. Beef and rice 481 calories baby. A super quick mid week dinner or takeaway idea!

Ingredients


  • 250g 5% fat mince beef

  • 120g red bell pepper- diced

  • 20g spring onions- finely cut

  • 5g ginger puree

  • 8g garlic purée

  • 40g sriracha sauce

  • 20g clear honey

  • 30g sweet chilli sauce

  • Optional: if you love a kick - add some dried 🌶️ flakes


  • 2 x veetee sticky rice pot


Method


Combine sauce ingredients into a bowl- sriracha sauce, purees, sweet chilli and honey.


In a large pan Sautée red pepper on a low heat using 1 kcal spray (track your oil separately) for 5 mins.


Next add mince and brown- increase the heat and keep the mix moving around the pan.


Add sauce and stir well and cooking the beef completely. Finally top with spring onions and allow them to cook through a little.


Serve! Veetee sticky rice takes 2 mins in the microwave for two pots! You can also serve with a handful of shop bought prawn crackers!
