Creamy garlic Parmesan chicken
Yum! Creamy but calorie friendly- what more could you ask for?!

Ingredient
240g raw chicken breast. I used one large breast- butterflied it and cut in half so I have two chicken fillets.
Seasoning for chicken
1 tsp smoked paprika
Salt and pepper
1tsp garlic granules
The sauce
40g finely diced red onion raw
90g lightest philidelphia
1tsp smoked paprika
10g raw crushed garlic clove
45g grand padano (Parmesan cheese- powdered)
1 x less salt oxo chicken stock cube- dissolved in 100ml boiling water
Method
Season chicken fillets.
In a large frying pan using 1kcal spray (track your own separately as I have not accounted for oil cals) seal your chicken breast for a couple of mins each side.
Remove from pan. If the pan needs a wipe down so- I used kitchen towel.
Next on a low heat sautee your red onions and crushed garlic cloves for a few mins- being careful not to burn. I kept the heat low and moved around the pan often.
Next add in stock, cream cheese, paprika and stir.
Add your chicken back to the pan and cover with a lid. On a low heat alllow it to simmer and cook chicken. Finally before serving add in Parmesan cheese and mix well.
