Creamy garlic Parmesan chicken

Ingredient


  • 240g raw chicken breast. I used one large breast- butterflied it and cut in half so I have two chicken fillets.


Seasoning for chicken

  • 1 tsp smoked paprika

  • Salt and pepper

  • 1tsp garlic granules


The sauce

  • 40g finely diced red onion raw

  • 90g lightest philidelphia

  • 1tsp smoked paprika

  • 10g raw crushed garlic clove

  • 45g grand padano (Parmesan cheese- powdered)

  • 1 x less salt oxo chicken stock cube- dissolved in 100ml boiling water


Method


Season chicken fillets.


In a large frying pan using 1kcal spray (track your own separately as I have not accounted for oil cals) seal your chicken breast for a couple of mins each side.


Remove from pan. If the pan needs a wipe down so- I used kitchen towel.


Next on a low heat sautee your red onions and crushed garlic cloves for a few mins- being careful not to burn. I kept the heat low and moved around the pan often.


Next add in stock, cream cheese, paprika and stir.


Add your chicken back to the pan and cover with a lid. On a low heat alllow it to simmer and cook chicken. Finally before serving add in Parmesan cheese and mix well.
