Chicken and chorizo Cajun chicken pasta

This is an all time favourite in our house! it’s Ross’s FAV!! So simple and easy to make and is lovely cold too so could be made into lunches (meal prep)

Ingredients
50g diced red onion
100g red peppers diced
250g diced chicken breast
300g cooked macaroni (approx 150g uncooked) I weigh out once cooked
60g lightest Philadelphia
100g 0% fat Greek strained yoghurt ( like fage- I use Aldi version)
10g garlic purée
7g Cajun chicken seasoning (i used Aldi)
25g diced chorizo - cut into little bits (this is a small amount of chorizo but it packs the flavour in) chorizo is high in fat therefore a high in calories sauage - and you only need a little
Method
Boil your macaroni for 10-12 minutes
Meanwhile, on a low heat lightly fry (I use 1kcal spray) your onions and peppers and sautee until soft for 5 mins , then add your chicken and cook for 5 minutes.
Add your chorizo and cook the mix for another 5 mins.
In a large bowl combine the Philadelphia , yoghurt, garlic purée and Cajun spice and mix well.
Drain pasta. Add to chicken and veg mix and remove from the heat. Stir in your cream cheese Cajun mix (do this off the heat so the yogurt doesn’t split) and serve immediately or pop on the fridge for meal prep (no need to reheat- it’s nice cold)
