Chicken and Bacon Caesar salad with Parmesan potato croutons

A perfect summer dinner idea! This was delish!

Ingredients for salad


  • 180g romaine lettuce

  • 6 x cherry vine tomatoes

  • 75ml Hellman’s Caesar dressing  (half of this each)


  • 2 x bacon medallions

  • 180g raw chicken breast

  • 1tsp garlic granules


Ingredients for potato croutons


  • 400g of peeled Maris piper potato’s

  • 12g padano cheese (powdered Parmesan)

  • 1tsp dried basil

  • Half tsp garlic granules

  • 12 x sprays of 1kcal spray



Method


I start by prepping my potatoes and chicken.


🥔 Potatoes- peel and wash potatoes and cut into cubes. In a large pan par boil for 5-7 mins until softening and then drain.


🍗 Chicken- slice chicken into thin slices. I butterfly the chicken and then cut into small chunks. Season with salt, pepper and garlic granules.


🥔 Potatoes- season potatoes with salt, pepper, padano cheese and garlic granules. Pop in air dried for 15-20 mins. I spray with 10x sprays 1kcal oil.


Now your potatoes are air drying lets cook your chicken.


🍗 In a large pan using 1kcal spray pan fry your chicken for 10 mins until browned and almost cooked. Add in your bacon medallions (I just up in to small pieces so it cooked quicker) pan fry for a few more minutes until chicken and bacon are cooked through.


🥗 Wash and prep salad. And begin to plate up.

Top salad with chicken and bacon. Add crispy potatoes and finally drizzle with Hellman’s Caesar salad dressing!
