Cajun chicken pasta

Ingredients


  • 350g of cooked macaroni (approx 170g of dried pasta once cooked I weight it out before adding to the pan)

  • 220g of chicken breast diced

  • 50g red onion - diced

  • 100g red bell pepper- diced


  • 10g lazy garlic purée

  • 7g cajun chicken seasoning

  • 60g lightest philidelphia cheese

  • 100g passatta with garlic

  • 20g padano cheese (the powdered parnesan cheese)

  • Half a chicken stock cube dissolved in 120ml water



Method


Boil pasta according to instructions - once cooked drain and weight out 350g of cooked pasta.


Using half of the cajun chicken seasoning - season your chicken breast chunks.


In a large frying pan using 1kcal spray (track this separately) sautee your onions and peppers on a low heat for 5 mins (you can add a splash of water to stop everything sticking if needed)


Next add chicken and brown for a few minutes.


Add passatta, garlic purée, cream cheese, stock, the rest of your cajun seasoning and padano cheese -  simmer for 5-10 mins until chicken chunks are cooked all the way through.


Finally add drained pasta and mix well!
