Shredded potato base quiche- meal prep


Such a tasty and easy to prep breakfast or lunch idea! A must try!



213 calories per slice (make 4 big slices)

Ingredients


  • 300g of peeled and grated Maris piper potatoes- squeeze as much moisture out of the potatoes as you can. This reduces the weight to around 220g.


  • 5 eggs

  • 2 smoked bacon medallions- cooked and cut up

  • 8 vibe ripened cheery tomatoes- halved

  • 30g finely sliced red onion

  • 75g 50% less fat mature cheese

  • Salt and pepper

  • 50ml skimmed milk


Method


Pre heat oven to 200 degrees.


Using 1kcal spray- grease your baking tray. I used a 9inch circular tray.


Place drained and grated potatoes on tray and pat it down. Bake for 20 mins at 200 degrees.


In a large bowl combine all other ingredients and mix well.


After potatoes have cooked for 20 mins pour in the filling mixture and pop back in the oven for 20 minutes until cooked through and golden brown on the top.


Allow to cool. Remove from baking tin.


You can store this in the fridge for 3-4 days!
