Quick Lentil Taco Crunch Salad Bowl


Such a QUICK mid week meat free dinner!

10-15 mins max with veg prep included!

I have tracked calories of lentil taco mix and you can serve as you wish! I have detailed below what I served mine with and how I added more protein with cheese!


263 calories per serving (serves 2)

p: 15g c: 54g f: 2g  (fibre 16.6g)


Ingredients


  • 1 x tin of drained tinned lentils (napolian)

  • Half tin of drained kidney beans - 130g

  • 50g raw red onion - diced

  • 150g raw red pepper- diced

  • 100g salsa (jarred)

  • Half a packet of taco seasoning (I used Asda own brand)


Method


In a large pan using 1kcal spray (account for this separately) and a dash of water so they didn’t burn I sautéed onions and peppers until soft for a few mins on a low heat.


Then add lentils, kidney beans, seasoning and salsa. Stir until it’s all heated up!

Done!


-I served mine with a big bed of salad leaves. Some tomatoes.

-25g crushed Doritos

-20g Orkney cheese (this adds more protein- you can use and track your own cheese)

My plate was just under 500 cals and was so filling and tasty!
