Chicken fajita and crispy cajun potato’s

I LOVE having my fajitas in a salad bowl as apposed to a wrap! It creates much more VOLUME and provides much more nutrients for less calories!!!

Crispy Cajun potatoes- recipe makes 3 servings. I have 1 serving and Ross has 2.

Chip Ingredients
450g peeled Maris piper potatoes- cut into cubes.
1.5 tsp of Cajun seasoning salt and paper Chinese seasoning (I got this from home bargains)
Half tsp garlic granules
1 tsp fired basil
13 sprays of 1 kcal spray
Chip Method
To ensure the potato cubes are soft on the inside and crispy on the outside I par boiled my chips for approx 5 (until soft but not breaking apart when poked with a fork)
I removed and drained potato cubes - popped back in the pan and gentle sprinkled with Cajun seasoning, garlic granules and basil
I transfer into my air frier sprayed 12x sprays of 1 kcal spray oil and air fried at 200 degrees for approx 12 mins.

Ingredients- I MADE fajitas WHILE potatoes WERE IN AIR FRIER
70g red onion- cut into slices
100g red pepper - cut into slices
280g raw chicken breast (1 large breast) cut into slices
17g (half packet) old El Paso Smokey bbq fajita seasoning
100g mild salsa
Method
In a large pan sautee onions and lappets until soft on a super low heat- use 1kcal spray and track separately.
add chicken to onions and peppers - increase heat and brown your chicken. After chicken has browned add seasoning and salsa and allow the chicken to cook through on a reduced heat for a few mins!
Serving-
I serving mine of a beautiful bed of salad with all my favourite salsa bits- you can do the same just track it separately! Add a bit of cheese on top and enjoy!!!!
