Crispy chicken satay noodles


Yummy!!!! Just yummy!!!!

I prepped everything before I started to cook! Once prepped it was a quick dinner to cook!



My plate as shown in pic is 567 calories. I have an even half of chicken and sauce. But gave Ross more of the noodles and veg (I’ve detailed calorie split below)

Crispy chicken - serves 2

233 calories per serving

P: 47g C: 12g F: 3g


Chicken ingredients - serves 2


  • 280g of raw chicken breast- cut into chunks

  • 1 x beaten egg

  • 30g golden paxo breadcrumbs

  • Tsp of Chinese 5 spice


Method


Beat egg on a bowl.

On a plate combine breadcrumbs and Chinese 5 spice and mix.


Dip chicken chunks into egg and then coat in breadcrumb mix.


Place chicken on a grilling tray so heat can get around the chunks - not flat on a baking tray as one side will go soggy.


Cook in pre heated oven for 20 mins.

Satay sauce - serves 2

100 calories per serving

P: 3g C: 8g F: 6g


Satay sauce Ingredients


  • 100ml plant based coconut milk- I got this in the long life section at supermarket (100ml is 28 calories)

  • 20g smooth peanut butter (no palm oil)

  • 1 Tsp curry powder

  • 15ml dark soya sauce

  • Tsp lime juice (I used bottled lime juice)

  • Optional- add dried chilli flakes

  • 1tsp plain flour


Method


In a pot combine ingredients and mix well. Heat on a low heat- mixing well to thicken. I done this just before serving as it takes only a few mins!

Stir fried veg and noodles - serves 2 or 3

(So I had gave myself a third and Ross 2 thirds)


  • If serving 3 (like I did above) 1 for you 2 for partner- 234 calories P: 6g C: 38g F: 6g


  • If you decide to split evenly- serving 2 people equally- 351 calories P: 10g C: 58g F: 10g


Ingredients


  • 300g fresh egg noodles

  • 200g crunchie rainbow veg stir fry bag mix


  • 5g garlic purée

  • 5g ginger puree

  • 15g clear honey

  • 10ml - spash of fresh orange juice

  • 30ml dark soya sauce

  • Optional- dried chilli flakes


Method


Combine sauce ingredients in a tub or bowl and mix.


Stir fry veg and noodles for a few mins. Add sauce and allow to heat through and done!
