Mini tuna and sweetcorn quiche


Such a great snack or lunch prep recipe!

  • Tin of tuna - drained weight 102g

  • 80g sweetcorn

  • 150g cottage cheese

  • 4 medium eggs

  • 40g red onion, finely chopped

  • salt and black pepper

  • 80g of cheddar cheese grated

  • spray oil spray (not accounted for in cals)

Method

Preheat oven to 180 degrees.


Mix the onion, tuna and sweetcorn together in bowl and season with some salt and black pepper. Not too much salt.


Put the cottage cheese and eggs into a blender and blend until smooth


Gently fold egg and cottage cheese mix into the tuna mixture.


Spray muffin/ cupcake tray with spray oil and spoon the mixture evenly into each space.


Top with your grated cheese


Place in the oven and bake for about 30 mins until cheese has melted and is golden.
