Healthy chocolate covered Cookie dough balls- low in refined sugar

These are healthy- low carb and low in refined sugar! Perfect for everyone but particularly those of you with PCOS.

A regular cookie dough recipe contains 14g of sugar per ball.

This recipe contains 3g! Winning!


These don’t take long to prep and you can store them in the fridge! I reckon they’d freeze well too!


This recipe makes 8 cookie dough balls


Things to note the dark chocolate matters! Opt for a higher cacao option. I used Lindt 85% it’s low in sugar at 11g per 100g.

Other brands of dark chocolate contain upwards of 45g of sugar per 100g!


You also want to use a no palm oil peanut butter - Meridian brand is fabulous- such a healthy peanut butter option! And it’s not pumped full of sugar!

Ingredients


  • 80g ground almonds (it’s like an almond flour) - picked this up in Asda

  • 20g Lindt 85% cacao chocolate - I chopped up into little bits

  • 40g Meridian smooth peanut butter

  • 1 tsp vanilla extract

  • 25g Sweet freedom vanilla syrup- you can get this from all major supermarkets or off Amazon- it’s a vegan sweet syrup and the bottle will last for ages- you can use for so much- adding to yogurt, oats, as a sweetner.


The chocolate coating

  • 15g Lindt 85% cacao chocolate - I chopped up into little bits

  • 4g of coconut oil - I have a jar of pressed coconut oil - link here https://amzn.eu/d/eLpIIQt


Method


Combine all ingredients in a bowl and mix well.


Spoon out and roll in your hand to form little cookie dough balls!


Melt your coconut oil and dark chocolate - you can do in microwave or in a bowl over boiled water.


Coat balls in melted chocolate.


Refrigerate or freeze and take out as you need!
