Salt and Pepper Chips and Chinese Chicken Curry

🍟 Chip Ingredients


  • 360g Maris piper potatoes- cut into chip sized slices.


  • 15g salt and paper Chinese seasoning (I got this from home bargains)

  • 10 sprays of 1 kcal spray

  • 2 x spring onions - sliced up

  • 4g of fresh chilli- this was half of a chilli- thinly sliced and deseeded


🍟 Chip Method


To ensure the chips are soft on the inside and crispy on the outside I par boiled my chips for approx 5 -7 mins (until soft but not breaking apart when poked with a fork)


I removed and drained potato wedges - popped back in the pan and gentle sprinkled with half of the salt and pepper seasoning.


I transfer into my air frier sprayed 10x sprays of 1 kcal spray oil and air fried at 200 degrees for approx 12 mins.


When serving I sprinkled with the rest of the seasoning, added spring onions and chilli!

🍛 Chicken curry ingredients - I MADE CURRY WHILE CHIPS WERE IN AIR FRIER ( I prepped curry ingredients ahead of time so it was quick)


  • 70g onion- cut into chunks

  • 40g frozen peas

  • 260g raw chicken breast

  • 200g cooked Mayflower curry sauce (comes in a box - it powdered- bought from home bargains



🍛 Curry Method


In a large pan sautee onions until soft on a super low heat- use 1kcal spray and track separately.


as per instructions on box, in a separate pot, cook 85g (powdered weight) and mix with 340ml of cold water and boil on a low heat until thickened.


While sauce is boiling - add chicken to onions - increase heat and brown your chicken.  After chicken has browned add peas and cook for a further few mins.


Finally weigh out 200g of cooked sauce and add to chicken.


(We used to leftover sauce to drizzle over chips) just make sure you track what you use separately- I’ve only accounted for 200g of cooked sauce!


I served with some prawn crackers! And it was Devine!!!! Track prawn crackers separately as I haven’t included in calories
