Chicken sausage and chorizo garlic & herb cheesy pasta

So quick to make and cheap!! Also a kiddo friendly recipe! It’s not “spicy” 😂

Ingredients


  • 5 x Aldi Italian style chicken chipolatas - cut it to chunks

  • 1 x small red onion diced

  • 1 x red pepper diced

  • 20g grated padano (the powdery Parmesan)

  • 1tsp dried parsley

  • 20g chorizo - cut into cubes

  • 70g lightest herb philidelphia cheese

  • 15g garlic purée

  • Half a less salt chicken oxo cube dissolved in 120ml of boiling water

  • 300g cooked pasta (approx 160g dried weight)


Method


Put pasta on to boil!


In a large pan using 1kcal spray sautee the red onion and red pepper for around 5- 8 mins until soft.


Add chicken sausages and brown for a few mins.

Add chorizo and garlic purée and mix well.


Next add stock, philidelphia, parsley and Parmesan and stir well. Cover with a lid and allow to cook for 5 mins on a low heat to cook through your sausages.


Season with salt and pepper.


Finally drain  pasta (I weighed once cooked - 300g) before adding to the pan. Mix well and serve!
