Broccoli cheesy “bread”without the bread


This is so yummy. A great alternative to “garlic bread” and a fab one for kids too!

This recipe makes 8 slices.

Ingredients 

  • 300g of fresh broccoli florets


Combined with;


  • 120g 50% less fat cheese

  • 30g grand padano cheese (powdered Parmesan)

  • 1 egg

  • Salt and pepper- not too much

  • 5g garlic purée

  • Half tsp of garlic granules or powder

  • 1 tsp dried basil


Method



Boil broccoli florets for 5 mins until soft. Drain and allow to cool.

Once cool chop up so it’s like broccoli rice and using kitchen roll squeeze out as much moisture as possible.


Preheat oven to 200 degrees.


Combine all ingredients in a large bowl and mix


Line your baking tray with grease proof paper .


Pour in mixture- using the back side of a spoon spread out mix into a rectangular shape- making sure it’s tightly packed.


Bake for 10 mins one side. Flip and bake for 10 mins on the other side so both sides are crispy.
