High-Protein Meat Free Cheesy Pickle Sourdough Toast

A fab meat-free high in protein lunch idea perfect if working from home or a lunch over the weekend.




Serves 1- 333 Calories. P: 27g. F: 10g C: 32G


Ingredients

  • 1 slice sourdough bread (147 calories)

    (I used Aldi Protein Toasting Sourdough — my slice weighed 63g as sizes vary)

  • 30g Sweet pickle(I used Aldi pickle)

  • 100g cottage cheese

  • 12g Red Leicester cheese, grated


Method


  1. Heat up your Air frier or Grill

  2. Pop the slice of sourdough in for a few minutes to lightly toast.

  3. Remove and spread over the pickle.

  4. Top with the cottage cheese, then sprinkle over the Red Leicester.

  5. Return to the slow cooker/ grill for around 5 minutes, or until the cheese has melted and everything is warmed through.


I had mine with some hummus (for a little added protein) and cucumber sticks. It was delish!
