Sweet potato and coconut soup (with an optional chilli kick)

Ingredients


  • 700g of peeled sweet potato mash- cut into even smallish chunks.

  • 200g red onion - diced

  • 100g celery- cut into chunks

  • 4 garlic cloves- crushed

  • 400g reduced fat tinned coconut milk

  • 3 x oxo chicken stock cubes dissolved in 1000ml boiling water

  • 3 tsp dried parsley

  • Optional: chilli flakes


Method


In a large pot (using 1kcal spray- track your oil separately) sautee onion and celery on a low heat for 5 mins.


Next add sweet potato and stock and boil for 20 mins covered.


Using a hand blender I then blended the soup until smooth, added parsley and salt and pepper, chilli flakes (optional) and coconut milk. I blended again!


Done!
