Slow Cooker Spicy Peanut Butter Shredded Chicken Noodles

Perfect for a midweek dinner or a relaxed weekend meal - throw everything in the slow cooker and enjoy your day knowing dinner is sorted.

Ingredients
200g raw chicken breast
300g fresh protein egg noodles (Asda)
30g red onion, sliced
60g shredded carrot
100g red pepper, sliced
8g lazy garlic
80g salsa (from a jar)
1 Oxo Less Salt Chicken Stock cube, crushed
8g light soy sauce
30g smooth peanut butter (choose one without palm oil or high sugar, such as Pip & Nut or Meridian)
1 tsp sugar
1 tsp dried chilli flakes
Salt & pepper, to taste
Method
Add everything except the noodles to the slow cooker.
Cook on high for 1.5 hours.
Shred the chicken using two forks (I do this directly in the slow cooker).
Add the noodles and cook for a further 30 minutes until heated through and coated in the sauce.
Serve and enjoy!
