Slow Cooker Spicy Peanut Butter Shredded Chicken Noodles

Ingredients

  • 200g raw chicken breast

  • 300g fresh protein egg noodles (Asda)

  • 30g red onion, sliced

  • 60g shredded carrot

  • 100g red pepper, sliced

  • 8g lazy garlic

  • 80g salsa (from a jar)

  • 1 Oxo Less Salt Chicken Stock cube, crushed

  • 8g light soy sauce

  • 30g smooth peanut butter (choose one without palm oil or high sugar, such as Pip & Nut or Meridian)

  • 1 tsp sugar

  • 1 tsp dried chilli flakes

  • Salt & pepper, to taste


Method


  1. Add everything except the noodles to the slow cooker.

  2. Cook on high for 1.5 hours.

  3. Shred the chicken using two forks (I do this directly in the slow cooker).

  4. Add the noodles and cook for a further 30 minutes until heated through and coated in the sauce.

  5. Serve and enjoy!
