Pizza bowl


A perfect one for the whole family and quicky!




But it would be lovely with some reduce fat garlic bread slices and salad!


350 calories per serving - serves 4

Ingredients - serves 4


  • 500g lean chicken mince

  • 1 x medium sized red onion- 85g diced (small)

  • 100g red bell pepper diced

  • 60g peeled and quartered mushrooms


  • 10g garlic purée

  • 10g tomato puree

  • 1 x reduced salt chicken stock cube

  • 400g chopped tinned tomatoes

  • 8 x fresh basil leaves- finely cut

  • 1 x tsp paprika

  • 1 x tsp sugar

  • 10g padano cheese (the finely powdered Parmesan)


  • 100g grated mozzarella cheese

  • 40g pepperoni slices


Method


In a large pan using 1kcal spray (track separately) sautée on a low heat your onions and peppers for 5 mins. I added some water after a few mins to stop them burning.


Then add mince chicken mince and brown (I increased the heat a little)


Next add- garlic purée, tomato puree, paprika, crush stock cube and mushrooms and stir well for a couple of mins


Preheat your grill now to 200 degrees


Next add chopped tomatoes. Basil. Sugar. And Parmesan. Allow this to simmer on a low heat (you can cover with a lid) for 8-10 mins.


Next portion up your chicken mince mix into 4 oven safe bowls. Top with mozzarella (25g each) and add pepperoni. Pop bowls on a baking tray and grill for 3 mins- keep an eye on them.


And done!
