Halloumi Sweet potato bun burger with sweet chilli mayo

Why I’ve swapped a regular burger bun for sweet potato-
Sweet potatoes bring fiber, potassium, and vitamin A. A white bun is mostly refined carbs with fewer nutrients.
Sweet potatoes generally have a lower glycemic load than a white bun, so you’re less likely to get that post-meal crash.
And this flavour combo is EPIC

Ingredients
🍠
400g sweet potato- approx 100g per slice- I used a large sweet potato
Half tsp smoked paprika
Salt and pepper
🧀
180g 30% less fat halloumi
Half tsp peri peri seasoning
🌶️
35g light mayo
15g sweet chilli sauce
Method
🍠 Pre- heat oven to 200 degrees. And line a baking tray in tin foil.
Slice your large potato to create 4 x 100g “bun” slices.
Place slices on baking tray- spray with 1kcal spray- season with salt, pepper and smoked paprika. (I have not included oil calories- account for your separately)
Pop in oven for 30 mins.
🧀 Meanwhile, soak your Halloumi for 20 mins.
🌶️ In a bowl combine mayo and sweet chilli sauce and mix well.
🧀 Slice- each “burger” weights 90g in my recipe.
🧀 When your buns are most ready - lightly fry your halloumi- I didn’t use oil. While frying I seasoned one side with peri peri seasoning.
Fry until each side is brown- it only takes a few mins each side.
Now build your burgers and enjoy!
