Chicken mince pizza base Pepperoni pizza

Omg this was sensational! And would be so fab for kids who love pizza but you want to make sure they are eating more protein in their diet (I know my girl is a carb monster- but no of it fills her up for long)

This recipes serves 2 but you can double up the ingredients to feed more people!
375 calories per person. Recipe serves 2 people

Ingredients
The base -
250g lean chicken mince
1 x egg
Salt and pepper
10g padano cheese (the fine powdered Parmesan cheeee)
1 tsp garlic granules
1 tsp smoked paprika
The toppings -
65g pizza sauce from jar ( I used Lloyd Grossmans)
60g mozzarella and cedar cheese mix (I got this from Aldi)
20g hot pepperoni slices (if you don’t like spicy use regular pepperoni)
15g raw thinly sliced onions
Method
Pre heat oven to 200 degrees.
In a large bowl combine all base Ingredients and mix well.
Line a large sheet baking tray with freeze proof paper and spread out your chicken mince base so it’s a thin evenly spread pizza base- you could make it into a rectangle or circle.
Pop in the oven for 20 mins.
Remove and top with toppings and place back in the oven for 5mins (or until cheese is melted and browns a touch)
Enjoy! I e served ours with a massive side salad and corn and the cob!
