Protein packed sausage and eggs - frittata style breakfast or lunch

Ingredients


  • 3 x Cooked chicken chipolata sausages (I used Aldi ones) I cook the packet and keep as a snack in the fridge

  • 2 x eggs

  • 100g cottage cheese

  • 2 x spring onions

  • 5 x vine ripe cherry tomatoes

  • 40g spinach


Method


In a small size frying pan- sautee cherry tomatoes and spring onions for a few mins on a low heat.

Then add chopped up cooked chicken sausages.

Add spinach and allow it to wilt for a few mins


Beat eggs in a bowl and combine cottage cheese and mix. Pour onto pan. Fry for a minute or so - so the bottle of egg is cooked and transfer to the grill for 5 mins!


Done! I topped with salt, pepper and some chilli flakes!
