Ingredients
500g lean chicken mince
50g very finely diced red onion (can use a food processor)
100g very finely diced yellow pepper (can use a food processor)
5g tikka curry powder
½ tsp cumin
½ tsp chilli flakes (or more if you like heat)
½ tsp ground coriander
¼ tsp onion granules
½ tsp garlic granules
Method
Add everything to a bowl and mix really well.
Line the air fryer with a silicone liner or baking paper liner.
Spread the mixture out evenly and flatten slightly.
Use a knife to score the mixture into 6 strips - this makes it easy to break apart once cooked.
Air fry at 200°C for 12–15 minutes, until cooked through and slightly charred/ browned on top.
Break along the scored lines and serve however you like.
Great with:
Warm flatbreads and yoghurt
Rice bowls and salad
Loaded wraps
Chips etc
